This week: The Negroni

The Negroni is basically the perfect cocktail. Gin, sweet vermouth, Campari — equal parts, stir, drink. Bitter, sweet, herbal, and ridiculously simple. But simple doesn't mean boring; the Negroni is a canvas.

Classic recipe:

  • 1 oz London dry gin (I use Beefeater)

  • 1 oz sweet vermouth (Carpano Antica or Cocchi)

  • 1 oz Campari

  • Stir with ice, strain over a big ice cube, orange peel.

Why it works: Campari's bitterness cuts the vermouth's sweetness, gin gives it spine. The whole is better than the parts.

Variations to Try

Boulevardier

Swap gin for bourbon. Gets richer, deeper, with vanilla and spice.

  • 1 oz bourbon (Buffalo Trace)

  • 1 oz sweet vermouth

  • 1 oz Campari

  • Stir, rocks glass, orange peel.

White Negroni

Lighter, more floral. Use Lillet Blanc instead of sweet vermouth, Suze instead of Campari.

  • 1 oz gin

  • 1 oz Lillet Blanc

  • 1 oz Suze

  • Stir, coupe glass, lemon peel.

Negroni Sbagliato ("Wrong Negroni")

Swap gin for prosecco — fizzy, lighter, great for brunch.

  • 1 oz sweet vermouth

  • 1 oz Campari

  • Top with prosecco (about 3 oz)

  • Build in a wine glass over ice, orange slice.

One bar tool you'll actually use

The Japanese jigger.

Most jiggers are clunky. The Japanese-style ones are thin-walled with a sharp spout and ¼ oz markings. You measure faster, more precisely. It's $20, but you'll use it for years.
